One of our favourites is this fragrant sausage, apricot and clementine stuffing: a dish that captures the brightness and warmth of the season in every bite. The sweetness of apricot pairs beautifully with the citrus lift of clementine oil, while thyme and spice bring a comforting depth that fills the kitchen with the unmistakable scent of Christmas.
It’s the very recipe we use to wrap our turkey on Christmas Day, a simple technique that keeps the meat tender and full of flavour. But it’s just as lovely baked separately in its own dish, served alongside roast vegetables and crisp potatoes.
Sausage, Apricot & Clementine Stuffing
Ingredients
500g sausage meat
1 egg yolk
1 tsp mustard
100g chopped dried apricot
50g thyme leaves
50g pumpkin seeds
1 tsp mixed spice
2 tsp clementine oil
Method
Place the sausage meat in a large bowl and mix in the egg yolk until fully combined.
Add all the remaining ingredients and stir well until everything is evenly mixed.
Use to wrap around your turkey before roasting, or shape into balls and bake separately until golden.
